Vegan Tofu Stir-Fry

INGREDIENTS

  • 1 block firm tofu, drained and cubed

  • 2 tablespoons soy sauce

  • 1 tablespoon cornstarch

  • 2 tablespoons vegetable oil

  • 2 cups mixed vegetables (like bell peppers, broccoli, and snap peas)

  • 2 garlic cloves, minced

  • 1 tablespoon ginger, minced

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • Cooked rice for serving

PREPARATION

  1. Toss the tofu cubes with soy sauce and cornstarch until evenly coated.

  2. In a large pan, heat the vegetable oil over medium-high heat.

  3. Add the tofu and cook until golden brown on all sides, then remove from the pan and set aside.

  4. In the same pan, add the mixed vegetables, garlic, and ginger, cooking until the vegetables are tender.

  5. Stir in the soy sauce, rice vinegar, and sesame oil.

  6. Add the tofu back to the pan, tossing to coat everything in the sauce.

  7. Serve over cooked rice.
