Vegan Lentil Bolognese

INGREDIENTS

  • 1 cup dried green or brown lentils

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 2 carrots, finely chopped

  • 2 celery stalks, finely chopped

  • 1 can (28 oz) crushed tomatoes

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to taste

  • Cooked pasta of your choice

PREPARATION

  1. Cook the lentils according to package instructions until tender, then drain.

  2. In a large pan, heat the olive oil over medium heat.

  3. Add the onion and garlic, cooking until softened.

  4. Add the carrots and celery, cooking for about 5 minutes.

  5. Stir in the crushed tomatoes, oregano, basil, salt, and pepper.

  6. Add the cooked lentils and simmer for 15-20 minutes, stirring occasionally.

  7. Serve over your favorite cooked pasta.
