Vegan Lentil Bolognese
INGREDIENTS
1 cup dried green or brown lentils
2 tablespoons olive oil
1 onion, finely chopped
2 garlic cloves, minced
2 carrots, finely chopped
2 celery stalks, finely chopped
1 can (28 oz) crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Cooked pasta of your choice
PREPARATION
Cook the lentils according to package instructions until tender, then drain.
In a large pan, heat the olive oil over medium heat.
Add the onion and garlic, cooking until softened.
Add the carrots and celery, cooking for about 5 minutes.
Stir in the crushed tomatoes, oregano, basil, salt, and pepper.
Add the cooked lentils and simmer for 15-20 minutes, stirring occasionally.
Serve over your favorite cooked pasta.
