Vegan Chickpea Salad Sandwich

INGREDIENTS

  • 1 can chickpeas, drained and rinsed

  • 2 tablespoons vegan mayonnaise

  • 1 tablespoon Dijon mustard

  • 1 celery stalk, finely chopped

  • 1 small red onion, finely chopped

  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)

  • Salt and pepper to taste

  • 4 slices of whole grain bread

  • Lettuce leaves and tomato slices (optional)

PREPARATION

  1. In a bowl, mash the chickpeas with a fork until they reach a chunky consistency.

  2. Stir in the vegan mayonnaise, Dijon mustard, celery, red onion, dill, salt, and pepper.

  3. Spread the chickpea mixture onto two slices of bread.

  4. Add lettuce leaves and tomato slices if desired.

  5. Top with the remaining slices of bread, cut in half, and serve.
