Sweet Potato and Kale Frittata
INGREDIENTS
1 large sweet potato, peeled and diced
2 cups kale, chopped
6 large eggs
1/4 cup milk (or almond milk)
1/4 cup feta cheese, crumbled
1 tablespoon olive oil
Salt and pepper to taste
PREPARATION
Preheat oven to 350°F (175°C).
Heat olive oil in an oven-safe skillet over medium heat. Add diced sweet potato and cook until tender.
Add kale and cook for another 2 minutes until wilted.
In a bowl, whisk together eggs, milk, salt, and pepper. Pour the egg mixture over the vegetables.
Sprinkle feta cheese on top and transfer the skillet to the oven.
Bake for 20-25 minutes, or until the eggs are set. Slice and serve.
