Stuffed Bell Peppers with Ground Turkey
INGREDIENTS
4 large bell peppers
1 pound ground turkey
1 cup cooked brown rice
1/2 onion, finely chopped
2 garlic cloves, minced
1 can diced tomatoes
1 teaspoon cumin
1 tablespoon olive oil
Salt and pepper to taste
PREPARATION
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds. Set aside.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
Add ground turkey, cumin, salt, and pepper, and cook until browned.
Stir in diced tomatoes and cooked rice. Stuff each bell pepper with the mixture.
Place stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes.
