Spring Salad with Radishes, Cabbage & Maple Vinaigrette
INGREDIENTS
5 radishes, thinly sliced
1 cup cabbage, shredded
2 cups local greens (kale, spinach, or lettuce)
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp Dijon mustard
2 tbsp olive oil
Salt & pepper to taste
PREPARATION
In a bowl, whisk together vinegar, maple syrup, mustard, olive oil, salt, and pepper.
Toss radishes, cabbage, and greens with the dressing.
Let sit for 10 minutes before serving.
