Spring Salad with Radishes, Cabbage & Maple Vinaigrette

INGREDIENTS

  • 5 radishes, thinly sliced

  • 1 cup cabbage, shredded

  • 2 cups local greens (kale, spinach, or lettuce)

  • 1 tbsp apple cider vinegar

  • 1 tbsp maple syrup

  • 1 tsp Dijon mustard

  • 2 tbsp olive oil

  • Salt & pepper to taste

PREPARATION

  1. In a bowl, whisk together vinegar, maple syrup, mustard, olive oil, salt, and pepper.

  2. Toss radishes, cabbage, and greens with the dressing.

  3. Let sit for 10 minutes before serving.
