Classic Smash Burger
INGREDIENTS
1 pound ground beef (80/20 blend works well for juicy burgers)
Salt and pepper to taste
Sliced cheese (American cheese works great)
Burger buns
Desired toppings (lettuce, tomato, onion, pickles, etc.)
Condiments (ketchup, mustard, mayo, etc.)
PREPARATION
Preheat your griddle or skillet: Heat a large, flat griddle or skillet over medium-high heat. Make sure it's nice and hot before you start cooking.
Prepare the beef: Divide the ground beef into equal-sized balls, about 2-3 ounces each. Season each ball generously with salt and pepper.
Get smashing: Place one beef ball onto the hot griddle or skillet. Using a sturdy spatula or burger press, firmly press down on the ball to flatten it into a thin patty. Press down for about 10-15 seconds to ensure good contact with the cooking surface. Repeat with the remaining beef balls, leaving some space between each patty.
Cook the patties: Let the patties cook without disturbing them for about 2-3 minutes. You should see the edges start to brown and crisp up.
Flip and add cheese: Once the edges are browned and crispy, use a spatula to carefully flip each patty. Immediately place a slice of cheese on top of each patty and allow it to melt.
Toast the buns: While the cheese is melting, lightly toast the burger buns on the griddle until they are golden brown.
Assemble the burgers: Remove the patties from the griddle once the cheese is melted and the burgers are cooked to your desired level of doneness. Place each patty on a toasted bun and top with your favorite toppings and condiments.
