Salmon and Dill Cream Pasta
INGREDIENTS
- 250g pasta (penne, farfalle, or your choice) 
- 2 fresh salmon fillets, skinless, cut into chunks 
- 2 tablespoons olive oil 
- 1 medium onion, finely chopped 
- 2 cloves garlic, minced 
- 250ml heavy cream 
- 2 tablespoons fresh dill, chopped 
- Juice of half a lemon 
- Salt and pepper to taste 
- Grated Parmesan (optional, for garnish) 
PREPARATION
- Cook the Pasta: Cook the pasta in a large pot of salted boiling water according to the package instructions. Drain and set aside. 
- Sear the Salmon: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the salmon chunks to the skillet and cook for about 3 to 4 minutes on each side until they are golden brown and cooked through. Season with salt and pepper to taste. 
- Add Garlic and Cream: Reduce the heat to medium-low. Add the minced garlic to the skillet and sauté briefly until fragrant. Pour in the heavy cream and let it simmer for a few minutes until it slightly thickens. 
- Add Dill and Lemon Juice: Stir in the chopped fresh dill and the juice of half a lemon. Mix well and let it simmer for a few more minutes to allow the flavors to meld together. 
- Combine with Pasta: Add the cooked pasta to the skillet with the salmon and dill cream sauce. Gently toss to coat the pasta evenly with the dill cream sauce. 
- Serve: Serve the salmon and dill cream pasta in warm plates. If desired, sprinkle grated Parmesan on top before serving.
