Roasted Delicata Squash Salad with Pomegranate and Feta

INGREDIENTS

  • 2 delicata squash, sliced and seeds removed

  • 1 cup arugula

  • 1/2 cup pomegranate seeds

  • 1/4 cup feta cheese, crumbled

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

PREPARATION

  1. Preheat oven to 400°F (200°C).

  2. Toss squash slices with olive oil, salt, and pepper, then arrange on a baking sheet.

  3. Roast for 20-25 minutes, flipping halfway through, until golden.

  4. Combine roasted squash with arugula, pomegranate seeds, and feta in a large bowl. Serve warm or at room temperature.
