Roasted Delicata Squash Salad with Pomegranate and Feta
INGREDIENTS
2 delicata squash, sliced and seeds removed
1 cup arugula
1/2 cup pomegranate seeds
1/4 cup feta cheese, crumbled
2 tablespoons olive oil
Salt and pepper, to taste
PREPARATION
Preheat oven to 400°F (200°C).
Toss squash slices with olive oil, salt, and pepper, then arrange on a baking sheet.
Roast for 20-25 minutes, flipping halfway through, until golden.
Combine roasted squash with arugula, pomegranate seeds, and feta in a large bowl. Serve warm or at room temperature.
