Quinoa Salad with Avocado and Black Beans

INGREDIENTS

  • 1 cup quinoa, rinsed

  • 1 avocado, diced

  • 1 cup black beans, rinsed and drained

  • 1/2 cup corn (canned or frozen)

  • 1 red bell pepper, diced

  • 1/4 cup red onion, finely chopped

  • Juice of 1 lime

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh cilantro for garnish

PREPARATION

  1. Cook quinoa according to package instructions, then let it cool.

  2. In a large bowl, mix quinoa, black beans, corn, bell pepper, onion, and avocado.

  3. Drizzle with lime juice and olive oil. Season with salt and pepper.

  4. Toss gently and garnish with fresh cilantro before serving.
