Quick Butternut Squash Soup
INGREDIENTS
1 butternut squash, peeled and cubed
1 onion, chopped
2 garlic cloves
4 cups vegetable broth
1/2 cup 15% cream (or evaporated milk)
Salt, pepper
PREPARATION
Sauté the onion and garlic in a little oil.
Add squash and broth. Bring to a boil.
Cover and simmer for 20 minutes until soft.
Blend until smooth, stir in cream, season, and serve.
