Quick Butternut Squash Soup

INGREDIENTS

  • 1 butternut squash, peeled and cubed

  • 1 onion, chopped

  • 2 garlic cloves

  • 4 cups vegetable broth

  • 1/2 cup 15% cream (or evaporated milk)

  • Salt, pepper

PREPARATION

  1. Sauté the onion and garlic in a little oil.

  2. Add squash and broth. Bring to a boil.

  3. Cover and simmer for 20 minutes until soft.

  4. Blend until smooth, stir in cream, season, and serve.
