Maple-Roasted Carrots with Thyme

INGREDIENTS

  • 1 lb carrots, peeled and sliced lengthwise

  • 2 tablespoons maple syrup

  • 1 tablespoon olive oil

  • Fresh thyme, for garnish

  • Salt and pepper, to taste

PREPARATION

  1. Preheat oven to 425°F (220°C).

  2. Toss carrots with maple syrup, olive oil, salt, and pepper.

  3. Arrange on a baking sheet and roast for 25-30 minutes until caramelized.

  4. Garnish with fresh thyme and serve.
