Maple-Roasted Carrots with Thyme
INGREDIENTS
1 lb carrots, peeled and sliced lengthwise
2 tablespoons maple syrup
1 tablespoon olive oil
Fresh thyme, for garnish
Salt and pepper, to taste
PREPARATION
Preheat oven to 425°F (220°C).
Toss carrots with maple syrup, olive oil, salt, and pepper.
Arrange on a baking sheet and roast for 25-30 minutes until caramelized.
Garnish with fresh thyme and serve.
