Quinoa Salad with Avocado and Black Beans
INGREDIENTS
4 salmon fillets
2 tablespoons Dijon mustard
1 tablespoon honey
1 tablespoon olive oil
1 garlic clove, minced
Salt and pepper to taste
Fresh parsley for garnish
PREPARATION
Preheat oven to 375°F (190°C).
In a small bowl, mix Dijon mustard, honey, olive oil, garlic, salt, and pepper.
Place salmon fillets on a baking sheet and brush the glaze over the top.
Bake for 12-15 minutes, or until the salmon is cooked through.
Garnish with fresh parsley and serve with a side of steamed vegetables.
