Quinoa Salad with Avocado and Black Beans

INGREDIENTS

  • 4 salmon fillets

  • 2 tablespoons Dijon mustard

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • 1 garlic clove, minced

  • Salt and pepper to taste

  • Fresh parsley for garnish

PREPARATION

  1. Preheat oven to 375°F (190°C).

  2. In a small bowl, mix Dijon mustard, honey, olive oil, garlic, salt, and pepper.

  3. Place salmon fillets on a baking sheet and brush the glaze over the top.

  4. Bake for 12-15 minutes, or until the salmon is cooked through.

  5. Garnish with fresh parsley and serve with a side of steamed vegetables.
