Herb-Roasted Chicken & Root Vegetables

INGREDIENTS

  • 2 chicken breasts

  • 2 carrots, chopped

  • 1 parsnip, chopped

  • 2 tbsp fresh herbs (rosemary, thyme)

  • 1 tbsp olive oil

  • Salt & pepper to taste

PREPARATION

  1. Preheat oven to 400°F.

  2. Toss vegetables with olive oil, salt, and pepper.

  3. Rub chicken breasts with fresh herbs and place on a baking sheet with vegetables.

  4. Roast for 25-30 minutes until chicken is fully cooked.
