Herb-Roasted Chicken & Root Vegetables
INGREDIENTS
2 chicken breasts
2 carrots, chopped
1 parsnip, chopped
2 tbsp fresh herbs (rosemary, thyme)
1 tbsp olive oil
Salt & pepper to taste
PREPARATION
Preheat oven to 400°F.
Toss vegetables with olive oil, salt, and pepper.
Rub chicken breasts with fresh herbs and place on a baking sheet with vegetables.
Roast for 25-30 minutes until chicken is fully cooked.
