Heirloom Tomato and Basil Pasta

INGREDIENTS

  • 4 cups heirloom tomatoes, chopped

  • 3 cloves garlic, minced

  • 1/4 cup extra-virgin olive oil

  • 1/4 cup fresh basil leaves, chopped

  • Salt and pepper to taste

  • 12 oz pasta (spaghetti or any other type)

  • Grated Parmesan cheese (optional)

PREPARATION

  1. In a large bowl, combine the chopped tomatoes, garlic, olive oil, basil, salt, and pepper. Let the mixture sit for at least 15 minutes to allow the flavors to meld.

  2. Cook the pasta according to the package instructions. Drain and reserve a bit of the pasta water.

  3. Toss the hot pasta with the tomato mixture, adding a little reserved pasta water if needed to help the sauce adhere to the pasta.

  4. Serve immediately, topped with grated Parmesan cheese if desired.
