Grilled Peach Salad with Maple Balsamic Dressing

INGREDIENTS

  • 4 ripe peaches, halved and pitted

  • 1 tablespoon olive oil

  • Mixed salad greens

  • 1/4 cup walnuts, toasted

  • 1/4 cup vegan feta cheese (optional)

  • 2 tablespoons maple syrup

  • 1 tablespoon balsamic vinegar

  • 1 tablespoon Dijon mustard

  • Salt and pepper to taste

PREPARATION

  1. Preheat a grill or grill pan over medium heat. Brush the peach halves with olive oil.

  2. Grill the peaches cut-side down for about 3-4 minutes until grill marks appear, then flip and grill for another 2 minutes.

  3. In a small bowl, whisk together maple syrup, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.

  4. Arrange the salad greens on a serving platter, top with grilled peaches, walnuts, and vegan feta.

  5. Drizzle the dressing over the salad and serve.
