Grilled Peach Salad with Maple Balsamic Dressing
INGREDIENTS
4 ripe peaches, halved and pitted
1 tablespoon olive oil
Mixed salad greens
1/4 cup walnuts, toasted
1/4 cup vegan feta cheese (optional)
2 tablespoons maple syrup
1 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
Salt and pepper to taste
PREPARATION
Preheat a grill or grill pan over medium heat. Brush the peach halves with olive oil.
Grill the peaches cut-side down for about 3-4 minutes until grill marks appear, then flip and grill for another 2 minutes.
In a small bowl, whisk together maple syrup, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
Arrange the salad greens on a serving platter, top with grilled peaches, walnuts, and vegan feta.
Drizzle the dressing over the salad and serve.
