Grilled Chicken and Citrus Salad
INGREDIENTS
For the salad:
2 grilled chicken breasts, sliced
4 cups mixed greens (romaine lettuce, arugula, spinach, etc.)
1 pink grapefruit, peeled and segmented
1 orange, peeled and segmented
1 avocado, diced
¼ cup lightly toasted sliced almonds
2 tablespoons fresh mint, chopped
For the Dressing:
Juice of 1 lemon
Juice of 1 orange
2 tablespoons olive oil
1 tablespoon honey
Salt and pepper to taste
PREPARATION
Prepare the Salad: In a large salad bowl, arrange the mixed greens.
Assemble the Salad: Add the grilled chicken slices, grapefruit and orange segments, diced avocado, toasted almonds, and fresh mint to the bowl.
Prepare the Dressing: In a small bowl, whisk together the lemon juice, orange juice, olive oil, honey, salt, and pepper.
Dress the Salad: Pour the dressing over the salad and gently toss to coat all the ingredients evenly.
