Greek Fries

INGREDIENTS

  • 4 large potatoes, washed and scrubbed

  • 2-3 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons chopped fresh parsley

  • Tzatziki sauce or hummus for dipping (optional)

PREPARATION

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Prepare the potatoes: Cut the potatoes into evenly sized wedges or strips, depending on your preference. Try to make them as uniform as possible so they cook evenly.

  3. Season the potatoes: Place the potato wedges or strips in a large bowl. Drizzle with olive oil and toss to coat evenly. Sprinkle with dried oregano, thyme, garlic powder, salt, and pepper. Toss again to ensure the seasonings are evenly distributed.

  4. Arrange on the baking sheet: Spread the seasoned potato wedges or strips in a single layer on the prepared baking sheet, making sure they're not crowded. This helps them crisp up better in the oven.

  5. Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the fries are golden brown and crispy, flipping them halfway through to ensure even cooking.

  6. Serve: Once the fries are cooked to your liking, remove them from the oven and transfer to a serving platter. Sprinkle with crumbled feta cheese and chopped fresh parsley.

  7. Optional: Serve the Greek fries with tzatziki sauce or hummus for dipping, if desired.
