Cucumber and Avocado Gazpacho

INGREDIENTS

  • 2 large cucumbers, peeled and chopped

  • 2 avocados, peeled and pitted

  • 1 clove garlic, minced

  • 1/4 cup fresh cilantro

  • Juice of 1 lime

  • 1/4 cup olive oil

  • 1 cup cold water (adjust for desired consistency)

  • Salt and pepper to taste

PREPARATION

  1. Combine cucumbers, avocados, garlic, cilantro, lime juice, and olive oil in a blender.

  2. Blend until smooth. Add water to reach your preferred consistency.

  3. Season with salt and pepper, and chill for at least 30 minutes before serving.

  4. Serve cold, garnished with extra cilantro or diced cucumber.
