Creamy Potato & Leek Soup
INGREDIENTS
3 potatoes, peeled and diced
1 leek, sliced
3 cups vegetable broth
½ cup milk
1 tbsp butter
Salt & pepper to taste
PREPARATION
In a pot, melt butter and sauté leeks until soft.
Add potatoes and broth, then simmer for 20 minutes.
Blend until smooth, then stir in milk.
Season with salt and pepper and serve warm.
