Chili-Lime Grilled Whole Chicken with Charred Jalapeño Sauce

INGREDIENTS

For the Chicken:

  • 1 whole chicken (about 3-4 pounds), giblets removed

  • 2 limes, juiced and zest

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • 2 teaspoons chili powder

  • 1 teaspoon paprika

  • 1 teaspoon ground cumin

  • Salt and pepper to taste

For the Charred Jalapeño Sauce:

  • 2-3 jalapeño peppers

  • 1/4 cup fresh cilantro leaves

  • 2 cloves garlic, minced

  • 1/4 cup olive oil

  • 2 tablespoons lime juice

  • Salt and pepper to taste

PREPARATION

For the Chicken:

  1. Prepare the marinade: In a small bowl, whisk together the lime juice, lime zest, olive oil, minced garlic, chili powder, paprika, cumin, salt, and pepper.
