Chicken with Boursin Cheese and Herbs
INGREDIENTS
4 boneless, skinless chicken breasts
1 package of Boursin Garlic and Fine Herbs cheese (or another flavor according to your preference)
1 cup sliced mushrooms
1/2 cup chicken broth
2 tablespoons olive oil
Salt and pepper, to taste
Fresh chopped herbs (parsley, chives) for garnish
PREPARATION
Chicken Preparation: Season both sides of the chicken breasts with salt and pepper.
Cooking the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through (about 5-6 minutes on each side). Remove the chicken from the skillet and set aside.
Sauce Preparation: In the same skillet, add the sliced mushrooms and sauté until tender.
Adding Boursin Cheese: Reduce the heat to medium, add the Boursin Garlic and Fine Herbs cheese to the skillet with the mushrooms. Stir gently until the Boursin is melted and forms a creamy sauce.
Adding Chicken Broth: Add the chicken broth to the Boursin sauce and mix well. Simmer for a few minutes until the sauce thickens slightly.
Returning Chicken to the Skillet: Return the chicken breasts to the skillet with the sauce. Ensure they are well coated with the Boursin sauce.
Serving: Garnish the chicken with freshly chopped herbs (such as parsley or chives) and serve hot. This dish pairs very well with rice, pasta, or steamed vegetables.
