Cauliflower and White Bean Soup

INGREDIENTS

  • 1 head cauliflower, chopped

  • 1 can (15 oz) white beans, drained and rinsed

  • 1 onion, chopped

  • 3 cups vegetable broth

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • Fresh thyme, for garnish

PREPARATION

  1. In a large pot, heat olive oil over medium heat and sauté the onion until softened.

  2. Add cauliflower, white beans, and broth, then bring to a simmer.

  3. Cook for 20-25 minutes until cauliflower is tender, then blend until smooth.

  4. Season with salt and pepper, garnish with thyme, and serve warm.
