Cauliflower and White Bean Soup
INGREDIENTS
1 head cauliflower, chopped
1 can (15 oz) white beans, drained and rinsed
1 onion, chopped
3 cups vegetable broth
1 tablespoon olive oil
Salt and pepper, to taste
Fresh thyme, for garnish
PREPARATION
In a large pot, heat olive oil over medium heat and sauté the onion until softened.
Add cauliflower, white beans, and broth, then bring to a simmer.
Cook for 20-25 minutes until cauliflower is tender, then blend until smooth.
Season with salt and pepper, garnish with thyme, and serve warm.
