Grilled Vegetable Quesadillas

INGREDIENTS

  • Flour tortillas

  • Zucchini, sliced

  • Bell peppers, sliced

  • Red onion, sliced

  • Shredded cheese (cheddar or Monterey Jack)

  • Olive oil

  • Salt and pepper to taste

PREPARATION

  1. Preheat your grill or grill pan to medium-high heat.

  2. Brush the sliced zucchini, bell peppers, and red onion with olive oil and season with salt and pepper.

  3. Grill the vegetables for 3-4 minutes per side, until they are tender and have grill marks.

  4. Lay out a flour tortilla and sprinkle shredded cheese on one half.

  5. Top the cheese with grilled vegetables and fold the tortilla in half.

  6. Grill the quesadilla for 2-3 minutes per side, until the tortilla is crispy and the cheese is melted.

  7. Repeat with remaining ingredients.

  8. Cut the quesadillas into wedges and serve with salsa and sour cream on the side.
