Baked Lemon Garlic Chicken with Roasted Vegetables
INGREDIENTS
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Juice of 1 lemon
3 garlic cloves, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 large sweet potato, diced
2 carrots, sliced
1 zucchini, sliced
Salt and pepper to taste
PREPARATION
Preheat oven to 400°F (200°C).
In a bowl, mix olive oil, lemon juice, garlic, thyme, rosemary, salt, and pepper. Coat the chicken breasts in the mixture.
Place chicken on a baking sheet and surround with diced sweet potatoes, carrots, and zucchini.
Drizzle vegetables with olive oil, and season with salt and pepper.
Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
