Baked Lemon Garlic Chicken with Roasted Vegetables

INGREDIENTS

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • Juice of 1 lemon

  • 3 garlic cloves, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 large sweet potato, diced

  • 2 carrots, sliced

  • 1 zucchini, sliced

  • Salt and pepper to taste

PREPARATION

  1. Preheat oven to 400°F (200°C).

  2. In a bowl, mix olive oil, lemon juice, garlic, thyme, rosemary, salt, and pepper. Coat the chicken breasts in the mixture.

  3. Place chicken on a baking sheet and surround with diced sweet potatoes, carrots, and zucchini.

  4. Drizzle vegetables with olive oil, and season with salt and pepper.

  5. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
