Apple and Fennel Salad with Citrus Vinaigrette
INGREDIENTS
2 apples, thinly sliced
1 small fennel bulb, thinly sliced
1 cup arugula
Juice of 1 orange
1 tablespoon olive oil
Salt and pepper, to taste
PREPARATION
In a large bowl, combine apple, fennel, and arugula.
Whisk together orange juice, olive oil, salt, and pepper.
Drizzle dressing over salad and toss to combine. Serve immediately.
