Apple and Fennel Salad with Citrus Vinaigrette

INGREDIENTS

  • 2 apples, thinly sliced

  • 1 small fennel bulb, thinly sliced

  • 1 cup arugula

  • Juice of 1 orange

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

PREPARATION

  1. In a large bowl, combine apple, fennel, and arugula.

  2. Whisk together orange juice, olive oil, salt, and pepper.

  3. Drizzle dressing over salad and toss to combine. Serve immediately.
